Keto Quick Bread

So, although bread is literally "off the table" on a Keto diet…  there are SO many ways to make alternatives!  Here are a few of my favorites.  All of these have around 1 to 1-1/2 net carbs per serving.



90-Second Bread (your time may vary)

3 tablespoons of almond flour
1 egg
1/2 teaspoon of baking powder
1 tablespoon of butter melted

Mix all together in a bowl the size of a cool whip container and microwave for 90 seconds.  I prefer to toast it afterwards as well.


Cloud Bread

3 eggs, separated
3 ounces cream cheese
1/4 t cream of tartar

Preheat oven to 300F.  Separate the whites into a medium mixing bowl. Put the yolks into a large bowl.  Add cream cheese to the yolks and blend until it looks like yellow cake batter.

Add cream of tartar to the egg whites and whisk until stiff peaks form.  Gently fold half the whites into the yolk mixture, not breaking down the fluffiness any more than necessary.  Carefully fold in the rest of the white mixture. 

Line a baking sheet with parchment paper and scoop the mixture into bun-size mounds and bake on the middle rack around 30 minutes.  Watch them and don't overcook.  They should be about the color of a nice hamburger bun when fully done.  Allow to  cool and store in an airtight container for a few hours (or overnight).  If eaten fresh, they are crumbly and dry tasting.  But after sitting for a few hours, they obtain a nice "bread" texture.

Five Minute Bread

1 egg white
1 egg
2 tbsp coconut flour
1 tbsp flaxseed meal
1 tbsp salted butter
3 tbsp unsweetened almond milk
1 tbsp baking powder
 Salt to taste

In a small, microwave safe bowl, add dry ingredients and whisk.  Add wet ingredients and continue whisking until a homogeneous batter forms.  Microwave for 5 minutes (depending on the strength of your microwave, it may need and extra minute or so).  Check if bread is ready by sticking a toothpick in the middle. If it comes out clean, the bread is ready.  Slice and serve (you may toast it, if preferred).

Microwave Bread for French Toast

4 T Olive oil
4 eggs
3/4 cup almond flour
1 tsp baking powder
2 tsp Maple Extract

Add oil, eggs, and maple flavoring in a medium mixing bowl and whisk well.  Add in baking powder and then slowly add almond flour.  Whisk until properly blended.  Grease microwave safe dish (preferably square or rectangle) and pour mixture into dish.  Microwave 3-5 minutes until cooked all the way through.  Allow to cool, then slice.  For french toast sticks, slice into 1" rectangles, dip in 1 egg mixed with 1 T water, grill on all sides in a buttered skillet, and top with warm sugar-free maple syrup.
