Cheesy Chicken Chowder


Ingredients:

2 tablespoons butter
2 stalks celery, diced
1 medium onion, diced
3 cloves garlic, minced
3 cups chicken bone broth
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/2 teaspoon black pepper

1/2 teaspoon white pepper
6 oz cream cheese, softened

4 oz white cheddar shredded
2 cups cooked chicken, chopped 

1/4 cup heavy cream  

This one is a great way to use up leftover or rotisserie chicken! 

Melt the butter in a medium saucepan over medium heat. Add the celery, onion, and garlic and cook until the onions are clear, about 6 to 8 minutes, stirring frequently.  Slowly stir in the broth and spices and bring to a boil. Turn heat down to medium low and simmer for a couple of minutes.

Whisk in the cream cheese, half at a time until smooth. Then add the shredded cheddar, about a 1/3 at a time and whisk until smooth.

Finally, stir in the chicken and cream, and cook up to 5 more minutes or until everything is nice and hot, stirring constantly.

Serve with any toppings you like. Makes 6 servings.
