Crackers

1-1/2 cup almond flour
1 large egg
1 tsp salt (to taste)
1/2 tsp pepper

Combine the dry ingredients in a large mixing bowl.  Beat the egg separately, then blend into the flour mixture.  It will be a bit dry and sticky.  Just keep kneading it until you have a solid dough ball.  You can add 1/4 to 1/4 tsp oil to help manipulate the dough, if necessary.

Spread onto parchment paper as thin as you can manage (1/4" or less).  Using a knife or pizza cutter, score the dough into square about 1-1/2" square.

Bake at 350F for 10 minutes or until the outer edges are browned.  Break gently along the score lines and separate the crackers.  Remove any outside edge pieces that are done and continue baking for other 5-10 minutes until all pieces are crisp and lightly browned.


Makes about 20 crackers.
