Flaxseed Bread

 Ingredients

1 cup Ground Flaxseed
1 tbsp sweetener
1/2 tsp  cinnamon
1/2 tsp baking powder
1/4 tsp salt

3 Large eggs
Several drops of banana extract (optional)

  • Preheat oven to 350F (I actually bake this in my toaster oven) 
  • Thoroughly grease or butter a small baking dish (I use a 9x5 for a 1-1/2" loaf)
  • In a medium mixing bowl, mix all of the dry ingredients
  • Crack the eggs and add the extract into the dry ingredients.
  • Whip the mixture until thoroughly blended, then pour into prepared pan
  • Bake 15-20 minutes or until fully cooked (test with toothpick)
  • Remove from the oven and let cool before serving.

I cut them into squares the size of nice brownies, then slice in half and load with cream cheese (as pictured).  The taste is similar to a slightly sweet brown bread.  Delicious with butter, cream cheese, cinnamon, or your favorite topping. I toast it in the morning, topped with butter and cinnamon for a warm treat with my coffee.
