Almond Flour Bread #1

1-1/2 cup almond flour
6 large eggs, separated
4 tbsp melted butter
3 tsp baking powder
1/4 tsp Cream of tartar
1 pinch pink salt
6 drops liquid stevia (optional)

Preheat the oven to 375F.

Separate the eggs and set the yolks aside.  In a mixing bowl, add the cream of tartar to the egg whites and whisk until soft peaks form.

In a separate bowl, combine the almond flour, baking powder and salt.  Beat in the egg yolks and butter.  Adding a few drops of liquid stevia can help reduce the "eggy" flavor.  Blend in the egg whites, one third at a time.  Be careful not to overmix as this is what gives the bread volume.

Pour mixture into a buttered loaf pan.  Bake for 30 minutes.  Check with a toothpick to test doneness.
